Cornbread
Step one to make a great homemade stuffing is great home-made cornbread. Here is the recipe for Cornbread, which is modified from my usual recipe that i use for eating as cornbread. Stuffing cornbread needs more flour to hold itself together in order to make a great crouton. It also needs to be very low in sugar, as too much sweetness can be off putting in stuffing mix.
